Rödtunga
Ingredienser:

4 dubbelfiléer av rödtunga/bergtunga (à ca 160 g)
100 g gröna oliver, hackade
100 g svarta oliver, hackade
smör
salt
vitpeppar, malen
Tillbehör:
4 potatisar, skalade och tärnade
2 små squashfrukter, tärnade
smör
1 dl gräslök, finhackad + några strån till garnering
2 citron, pressade
4 dl matolja
1 gul lök, finhackad
salt
vitpeppar, malen

Gör så här
Salta och peppra rödtungsfiléerna på båda sidor. Vik ihop dem på längden och stek dem i smör 3 min. Vänd och tillsätt oliverna. Låt det hela småsteka 3 min även på denna sida.
Tillbehör: Gör en rotfruktsblandning genom att bryna potatisen i en klick smör. Tillsätt squashen och den hackade gräslöken och smaka av med salt och vitpeppar.
Gör en citronvinägrett genom att blanda citronsaft och matolja. Tillsätt löken och salta och peppra.
Vid serveringen, fördela rotfruktsblandningen på portionstallrikar. Lägg en rödtunga ovanpå och strö oliverna runt. Skeda över citronvinägretten och garnera med några gräslöksstrån.
